Merry Cranberry Salsa
When you’re spending all day cooking, you 100% need a little something to snack on until the main course is ready. When you need a light snack – look no further than this cranberry salsa – for an extra touch of holiday spirit, get red and green tortilla chips too! It’s a little bit sweet, a tad bit spicy with all kinds of bursting-in-your-mouth citrus flavor!
Ingredients:
- 1 (12 oz) package fresh cranberries
- 1/3 sweet onion, diced small
- 1 jalapeno pepper, seeded, cored and diced small
- 1 bunch fresh Cilantro, chopped
- 2 limes, juiced
- ¼ cup Coconut sugar or Monk Fruit Sugar
- 1 pinch of Kosher Salt and Fresh Ground Pepper
- Dash of Garlic Powder or add 1 teaspoon minced garlic – optional
Directions:
- Wash and add cranberries (in small batches) to a blender or food processor. Blend to small consistency, mixing a few times, and add to a bowl
- Dice the sweet onion & jalapeno pepper and add to the cranberries
- Add the lime juice, sugar, garlic, salt and pepper and mix
- Refrigerate if not using immediately
- Serve at room temperature
